# How-To Steps:

01 - Place chicken thighs or breasts in a large stockpot. Add water, bay leaves, peppercorns, and 2 teaspoons salt. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes. Skim off any foam.
02 - Transfer chicken to a plate to cool slightly. Discard bay leaves and peppercorns from the broth.
03 - In a large skillet or the same pot, heat olive oil over medium heat. Add onion, carrots, and celery and sauté for 5 to 6 minutes until softened. Add garlic, thyme, and oregano; cook for an additional minute.
04 - Return sautéed vegetables to the broth. Shred or dice cooled chicken, discarding skin and bones, then add back to the pot.
