# Expert Hints:

01 -
  • Its like eating a rainbow that actually hugs you back from the inside
  • The way the flavors meld together makes you feel virtuous without sacrificing an ounce of satisfaction
02 -
  • The beetroot will stain everything it touches, including your hands and wooden spoons, so maybe use metal or have some baking soda ready for cleanup
  • Adding the fresh herbs at the very end is absolutely critical, otherwise they lose all that bright flavor that makes this soup special
03 -
  • Cut your vegetables into uniform sizes so everything finishes cooking at the same time
  • Start with less salt than you think you need, the lemon brings out all the other flavors
